Salmon Bowl

A simple, nourishing salmon bowl with fluffy rice, fresh veggies, creamy avocado, and a spicy mayo drizzle. Colorful, satisfying, and packed with flavor.

Ingredients

For the salmon

  • 2 salmon fillets

  • 1 tbsp avocado oil

  • 1 tbsp soy sauce (low sodium)

  • 1 tsp sesame oil

  • 1 tsp garlic powder (I used 1/2 frozen garlic cube from Trader Joe’s; fresh garlic works too)

  • 1 tsp onion powder

  • ½ tsp ground ginger (I used 1/2 frozen ginger cube from Trader Joe’s; fresh ginger works too)

For the spicy mayo

  • Avocado oil mayo or your choice of mayonnaise

  • Sriracha, to taste

For the bowls

  • Cooked white rice

  • Cucumber, sliced

  • Avocado, diced

  • Green onion, sliced

  • Pickled ginger

  • Additional toppings of choice (I added pickled radishes from the farmer’s market to this one)

Optional shortcut: Instead of the individual seasonings, use Trader Joe’s Salmon Rub to taste.

Directions

  1. Preheat oven to 425°F.

  2. Cut the salmon into bite-sized cubes.

  3. Add the salmon to a bowl with the avocado oil, soy sauce, sesame oil, garlic powder, onion powder, and ginger. Toss until the salmon is evenly coated.

  4. Transfer the salmon to a baking sheet or baking dish and bake for 6–8 minutes, or until cooked through to your liking.

  5. While the salmon cooks, mix the mayo with sriracha to taste.

  6. Add cooked rice to each bowl and top with the salmon, cucumber, avocado, green onion, and pickled ginger.

  7. Finish with a drizzle of spicy mayo and enjoy.
